It's 11:00am and I am STARVING! I just finished making side dishes for today's cookout, which didn't help any - but I a really looking forward to some good eats and spending time with my mama! I found this yummy recipe for a knock-off of Chipolte's Corn Salsa in this months Food Network Magazine so I decided I would try it since it is one of my favorite salsas. It is delicious!!
So if you have time, try it out. All fresh ingredients, sweet and slightly spicy.
ALMOST FAMOUS CORN SALSA:
1 small poblano chile pepper, seeded
3 teaspoons extra-virgin olive oil
1 cup corn kernals (from 2 ears)
1 small jalapeno pepper, seeded and chopped
2 teaspoons chopped fresh cilantro
2 tablespoons chopped red onion
2 tablespoons fresh lime juice (one small lime)
1/2 teaspoon sugar
salt to taste
Preheat a grill to medium high. Brush the poblano with 1 teaspoon olive and grill, skin side down until charred but still firm, about 5 minutes. Cool slightly and peel the skin off. I use a dry paper towel to rub the skin off. Finely chop.
Bring a small pot of salted water to boil. Add fresh, shucked corn and cook until tender about 2-3 minutes. Drain, cool, and slice from cob.
Mix the corn, poblano, jalapeno, cilantro, onion, 2 teaspoons olive oil, sugar, lime juice, and salt in a medium bowl.
Chill and ENJOY!
